Tuesday Talk: Some of My Favorite Gluten Free and Dairy Free Treats!

Hi!! Happy Tuesday!!

I hope everyone had a SUPER fun Halloween yesterday! Our weather was amazing and the kids had a blast trick-or-treating around our neighborhood!!!

Okay- last week- I mentioned that I made some absolutely delicious 5 ingredient cookies- that also happened to be gluten free!
Well- I am going to share that recipe today- along with 2 other recipes that are SO easy and that are also gluten free- AND can be dairy free if you need them to be!

Just kind of a quick backstory- about 2 years ago- I cut dairy out of my diet due to digestion issues that I couldn't figure out.  I have never been officially diagnosed as "lactose intolerant" but I know how my body feels when I DON'T consume things with dairy in them versus when I do. And the latter is NOT good. HA!  Well...after I had Marshall- I started having some tummy troubles again...so I looked at my diet and decided to cut gluten out of it to see if that helped. And it did!  I noticed a big difference in how I felt overall- GREAT versus NOT great- so for now- I follow a gluten free AND dairy free diet. 
"Every day" eating is not difficult for me...but when it comes time to bake some cookies or make some cupcakes with my girls...that is when I get in a little trouble- because most goodies are not gluten free or dairy free!  So over the last few months- I have found a couple "go-to" gluten free and/or dairy free recipes- that are SUPER yummy AND that I can enjoy!  

I figured I can't be the only one out there following a dairy free/gluten free diet- so I wanted to share the recipes with you today!

First up-
 Dairy- Free Three Ingredient Chocolate Chip Muffins. These are NOT gluten free. They COULD BE if you used a gluten free chocolate cake mix (you can get those at Aldi!)- however- I have not tried it with a GF cake mix- so I can't say if they come out differently versus when you use a regular cake mix. 
Since gluten tends to make my stomach "gurgly" - I pretty much just avoid it all the time. 
I have found, though, that in very limited quantities- I am okay- so every once and awhile- I can have one of these cupcakes. I love this recipe not only for me- but for my kiddos- because it is SO much healthier than your normal chocolate chip muffin recipe!

Here's what you need!

Dairy- Free Three Ingredient Chocolate Chip Muffins
1 box chocolate cake mix- be sure to read your label and make sure your cake mix does NOT have milk in it- (IF you want these to be dairy free)
1 can of pumpkin puree
1- 1 1/2 cups dairy free chocolate chips (or regular chocolate chips if you don't need the cookies to be dairy free!)

Mix cake mix, pumpkin puree and chocolate chips together. This mix will make 12 large cupcakes or 16-18 small cupcakes- it just all depends on full you fill up your muffin liners!
Bake at 350 for approximately 15 minutes- a tooth pick should come clean once they are done baking!
These "muffins" are SO good. You can't even taste the pumpkin! My husband- who is super picky when it comes to dessert- even loves them!
 Next up- Peanut Butter Chocolate Chip Cookies!!
To make these super amazing cookies- that are GLUTEN FREE- all you need are these 5 ingredients: 

Peanut Butter Chocolate Chip Cookies 1 cup of creamy peanut butter
1 cup of packed brown sugar
1 egg
1 tsp of baking soda
1 cup of chocolate chips (use dairy free chocolate chips to make these cookies dairy free)

Mix the first 4 ingredients together- then add in your chocolate chips! Bake them at 350 degrees for about 9-10 minutes. Let them "rest" on the hot cookie sheet for another 1-2 minutes and then cool on a baking rack. Our cookies were still pretty gooey after I let them cool for a bit- which made them DELICIOUS- but if you want your cookie to stay in one piece- just pop them in the fridge for about 30 minutes, so they can firm up a bit!
To make these cookies not only GLUTEN FREE- but DAIRY FREE- use a dairy free brand of chocolate chips instead of regular chocolate chips! I get these chocolate chips at my local Fresh Thyme Market- I know you can also get them on Amazon. I have NOT seen this particular brand of chocolate chips at my local Target or Walmart- but your local store might carry them!
And here's the YUMMY finished product. Seriously. MAKE THESE!! They are SO good! 
And finally- the super classic treat- called Puppy Chow or Muddy Buddies- depending on where you live :) is another SUPER DELICIOUS GLUTEN FREE (and can be DAIRY FREE too) treat!
All you need is 4 ingredients and you can make one of the BEST treats ever!!
  • 1 cup semisweet or dark chocolate chips
  • 1 cup creamy peanut butter
  • 6-7 cups Rice Chex Cereal
  • 1-2 cups powdered sugar

 And just a FYI- if you are already an Aldi shopper- you know this...but for those of you who don't regularly shop at Aldi- they have an AWESOME selection of gluten free products!! 
 They have gluten free chicken nuggets, waffles, pancakes and pizza in the freezer section and LOTS of gluten free pantry staples! I buy their gluten free whole wheat bread and their gluten free wraps!
And there you have it! A few gluten free and dairy free recipes that I make on regular basis at our house!! For me- I feel THE BEST when I am eating a "clean" diet- that basically consists of fruits, veggies and proteins. But- you gotta live- right?!? That's why I have really enjoyed finding a few "go-to" dessert recipes that I can enjoy along with the rest of my family!

  3. I love the simplicity to these recipes. We had an Aldi open near us a couple of years ago & my husband went and told me I wouldn't like it, so I never went. Then a few weeks ago I got adventurous and stopped in. Oh my goodness, I found so many good deals, and healthy products. I was pleasantly surprised! My only complaint..and maybe it's because I'm a new shopper and just don't have it down yet...but I couldn't figure out the organization of the store. I think I walked down the aisles over and over trying to find everything on my list!

  4. I'm not gluten or dairy free, but these recipes look amazing!! I love puppy chow, those pumpkin muffins look delish and I'd never turn down a cookie :) My SIL follows a gluten free diet so I'm passing these recipes on to her!
