Menu Plan Monday + A Couple New favorite Aldi Items!!

Happy Monday!
How was your weekend?? The weather was gorgeous in our area and we spent as much time outside as possible!  My husband had to work both Saturday and Sunday- but he got home in time on Saturday for us to be able to go out and get frozen yogurt after dinner!  My girls were so happy :)  Sunday, he worked a 14 hour shift, so the kids and I went to Mass with some friends, had a picnic lunch and ended our weekend with Happy Meals at the park.    It was the perfect end to our weekend!

Time to share my menu plan for the week!

For tonight's dinner, we are grilling out turkey cheeseburgers.  I make my girls burgers extra small and cut their bun to fit the burger.  They think it is so fun to have a mini burger and I LOVE that there is no complaining at the dinner table! I am going to make some organic white shells and cheese that I got from Aldi and steam some frozen peas.  Easy, casual meal to ease us into the week :)

Tuesday night I am making our rendition of the burritos bowls you can get at Chipotle.  You can use any kind of meat you want- I am going to brown up some lean, ground turkey with some taco seasoning.  Since I am all about multi-tasking, while I am browning the turkey, I will also be making our brown rice.  I love to make my rice with vegetable stock or chicken stock in place of water- it adds so much flavor to the rice!  Chop up some lettuce, shred some cheese, put out some salsa, avocado and salsa- and you have everything you need to make burrito bowls!  My husband LOVES this dinner :)

My husband is working late on Wednesday night, so it is going to be leftover night! We should have enough food leftover from Monday and Tuesday to feed our crew and clear out our fridge! 

Thursday night, we are going to grill pork tenderloin (I get mine from Aldi!), mashed sweet potatoes and steamed broccoli. Super easy, super fresh and just plain YUMMY!

On Friday night, we are going to be grilling again (totally my FAVORITE method of cooking when the weather allows it!)- this time chicken breast.  My current favorite "marinade" for our chicken is an Italian dressing seasoning packet, about 1/4 cup white vinegar and 1/2 cup milk.  The combination of vinegar and milk mimics buttermilk and made the chicken so moist and tender!  I just put the chicken, seasoning packet, vinegar and milk in a big ziploc bag in the morning and let the flavors meld all day.  Then, when my husband grills the chicken, he pours the remaining marinade over the chicken while it is cooking....it is so simple and REALLY delicious!

Saturday, we are either going to get a few take out pizzas or go out for dinner.  We will be having Aaron's brother, wife and daughter visiting us- so we will see what sounds good to them :)

And for Sunday, a classic supper- spaghetti and salad.  I will also most likely make some cheesy garlic bread since my hubby and girls love it.  I wish I could say I make my spaghetti sauce homemade...but I don't :)  I use two jars of Aldi's organic marinara sauce, a pound of browned, lean grown turkey seasoned with italian seasoning, garlic powder, salt and pepper and a box of whole wheat pasta.  It is really good and really easy- pretty much my motto in the kitchen! HA!

And I just had to share two super awesome items that I found at Aldi during my weekly grocery trip!  This organic popcorn is DELICIOUS and great, healthy snack!  It is $1.99 for a very large bag...such a great value!  The other new item I am loving is Aldi is now carrying organic ketchup!  There are no additives or high fructose corn syrup in it.  Ketchup was one of those items that I would have to pick up at Wal Mart because I could only find specific brands that didn't have high fructose corn syrup in them.  So excited I can get our ketchup at Aldi now!

  1. Looks like a yummy week! I made your gravy and biscuits this week, they were really good! I used Jimmy dean's turkey sausage crumble, it lowered the weight watcher points so I could enjoy it too without the guilt :) .... thanks for the idea!

    1. Hi Jessica! So glad you enjoyed the biscuits and gravy- what an awesome idea to use the turkey sausage crumbles- I love those!! I love make my egg and veggie scrambles- then adding a 1/4 cup of the sausage crumbles to get some extra protein! Have a great day!
