Menu Plan Monday- Pinterest Inspired!

Hi!! Happy Monday!! How was your weekend??
Our's was FULL as usual...but we still managed to get several big chores done around the house, including me getting 4 loads of laundry washed, dried AND put away. I don't know about you- but I feel like super woman when that gets done! HA!

Sooo...the last few weeks I have been really slacking with planning out our meals for the week.  And you know what? I have been paying for it when 5:15 pm rolls around and my kids are starving and tired and my husband calls me, starving and tired :), wanting to know whats for dinner when he gets home from work.  YEAH...so that was NOT fun.

Back to menu planning it is! :)  I used my Pinterest board for inspiration this week and came up with what I think is a very easy, healthy and yummy menu plan!

Here is what our family will be eating this week!

Monday: Apple Cider Pork Tenderloin with parmesan noodles and steamed broccoli- I am going to boil some fettuccine noodles and make a simple parmesan white sauce as our "side" to the pork and steam a bag of frozen broccoli florets for our veggie (I love the frozen veggies from Aldi!)

Tuesday: BBQ Meatloaf Muffins with Roasted Vegetables and Mashed Potatoes- I am taking a slight short cut with this meal and am going to serve some Bob Evans all natural mashed potatoes with the meatloaf and veggies.  They are delicious and I don't have to peel, boil and make a big pot of mashed potatoes.  On a busy weeknight- yes please- I will take all the help I can get :)

Wednesday: Sloppy Joes with oven baked french fries and steamed green beans- The only change I plan to make to the sloppy joe recipe is to cut out a bit of the sweetness (brown sugar) as my husband is not super big on "sweet" anything when it comes to his dinner (unless its dessert :)

Thursday: Dinner out for Mommy and Daddy! Grilled cheese, broccoli bites and applesauce for the kids :) Aaron and I have a fun event to attend, so my friend is coming over to watch the kids for a couple of hours.  I am going to make them grilled cheese, bake some broccoli bites (they are from the organic line of kids' food from Aldi!) and give them a bowl of applesauce sprinkled with some cinnamon sugar for their "dessert." 

Friday: Pizza Picnic! We love the Mama Cozi's Take & Bake 16" inch pizzas from Aldi! I buy our's at the beginning of the week and put it in the freezer. I put it straight from the freezer into the oven and it bakes at 425 degrees for about 15 minutes and comes out perfect! 

Saturday: Crockpot Salsa Chicken Quesadillas with sliced cucumbers and ranch dipping sauce- I am going to use this salsa chicken and make quesadillas with it! SO EASY!!

Sunday: Grilled Turkey Sausage, steamed green peas and corn and organic cheddar cheese shells- this is a super simple, "non-recipe" meal to end our week.  I picked up some all natural turkey sausage (by oscar mayer) at Walmart, I get our frozen veggies from Aldi as well as our organic shells and cheese. Yummy and easy- just what we will need after a busy weekend! :)

So that's what is going to be on the dinner table at our house this week!  After a couple of weeks of not really having an "official" menu plan...it feels SO good to have our dinners planned out for the week!

  1. All of these sound SO yummy! I saw on Shay's blog this morning she posted the apple cider pork tenderloin, and then you posted it...so i'm making this this week!! Tomorrow I will blog about the "unstuffed cabbage rolls" I made last night. So easy and so good! Happy Monday!
