Monday Mish-Mash + Our Weekly Meal Plan!

Hi!! Happy Monday!! 
How was your weekend?
Our's was great! We didn't do anything special...just a good ol' regular weekend :)
After being out of town the last several weekends though...it was nice to have a boring weekend at home:)

We kicked off our weekend in total party mode: We took all the kids to the dentist early Friday morning. HA!
The girls are awesome and go back by themselves....it was James' first time at the dentist and I am SO thankful Aaron was able to come with us before heading to work! He laid with James and all was right with the world. I walked into the exam room and couldn't stop laughing when I saw the two of them like this!
Four kids in and out of the dentist in under an hour....AMAZING. Whenever I take my kids to the dentist or the doctor I am always SO grateful we have access to awesome healthcare. It's not something that should ever be taken for granted!
Saturday morning started bright and early for Aaron and I...even on the weekends we like to get up early- before the kids. We're able to chug drink some coffee and get our minds straight before our crazy crew comes barreling down the stairs! HA!
Normally- we like to go workout together at the YMCA on Saturday mornings...but we are waiting a little while longer until we start bringing Marshall to the gym daycare.  So- I went for a run and my CrAzY husband strapped on his 25lb weighted vest and did a workout at home. He has had to modify his workouts quite a bit with his torn ACL- but it's not keeping him down- can't you tell by his face?!? HA!

We headed to the pool later in the morning for swimming and a lunch picnic.
The weather was BEAUTIFUL!! Sunny but not blazing hot. 
On our vacation, Celine and James really started loving being in the "big" pool- so Aaron spent most of his morning catching James jump in the pool- he couldn't get enough of it! :)
Sunday we went to church and just hung around the house. I always like to get a couple loads of laundry done and prep food for the upcoming week. The girls did lots of coloring and crafting and Aaron went out to get some supplies for a big garage sale we are having this upcoming weekend!! I am such a freak- but I am so nervous about having a garage sale! We have a TON of stuff we are selling and I know it's going to be a lot of work to get it all set up. I just hope that all of our work pays off and we get a lot of people to stop by and buy stuff! So far the weather is looking gorgeous for Friday and Saturday (the days we're having it- but you can bet I will be obsessively checking the weather channel all week long- HA!)

Another thing I got done yesterday was an official meal plan!! I haven't meal planned in almost a month and it felt so good to get organized and have all of our meals set for the week!
It's simple and easy- as it always is at our house :)
For Monday's black bean burritos, I am using this crock pot recipe to make our refried black beans. It's the easiest recipe (scroll down a little bit in the post to see the recipe I am talking about :) and they turn out SO good! Tuesday is "Dress Up Like a Cow Day" at Chick Fil A- and we are totally going!! Wednesday, Aaron has a meeting so it's an easy, quick meal for the kids- I will have a salad :) Thursday, we're going to take our leftover refried black beans and make "Chipotle burrito bowls." I take some shredded lettuce, then a scoop of quinoa (or any kind of rice), then some taco meat (again- any kind of meat works great!), then refried black beans, a dollop of salsa, some sour cream and put a few avocado slices on top! Aaron loves this meal :) The kids will have cheesy bean tortilla chips with fresh veggies and fruit.
Pizza for dinner on Friday and we are going to grill out hot dogs on Saturday. I picked up some sweet potato fries this past week at Aldi and will have those too! They are SO good.
On Sunday, we're having grilled chicken- I am going to make this marinade- it sounds delicious- I am excited to see how it tastes once the chicken has been grilled!

And just in case you didn't know- tomorrow, Tuesday, July 12 is Chick-Fil-A's annual Cow Appreciation Day!! If you dress up like a cow- you get a free meal! We have done this as a family since 2010-and it is SO fun!! Our cow "costumes" are nothing elaborate- we just all wear black and white and then on Chick-Fil-A's website you can print off spots and ears. 
It's one of the girls' favorite things to do in the summer and we are so excited to dress up like a cow and get a FREE dinner. And yes- Aaron and I both dress up too :) Ain't no shame in our game!! HA!

  1. I love having garage sales! We have a whole corner in the basement that I need to go through & sort. I was hoping to have one in August, but I just don't think that is going to work this year. Then there will just be more for next year. haha!

  3. Sounds like a great weekend! Love the pic of Aaron laying in the dentist chair with James! The marinade sounds delicious. This weekend, I didn't put our grilled chicken in a marinade. I just sprinkled it with seasoning salt before grilling. Everyone declared it the best grilled chicken ever, so I thought that was pretty funny! Sometimes the easiest is the best I guess! Have a magnificent Monday!

  8. The picture of your son & husband at the dentist made me laugh...at first I thought your husband was the dentist...I was like, wow, a hands on dentist. Ha! :)
    I LOVE homemade Chipotle Bowls. We haven't had those in a while, I need to add it to my menu ASAP. Hope you guys have a great week!

  10. Yay for a fun, low key weekend! Love that picture of your boys at the dentist. That's nice that you can get those appointments taken care of in the summer and that they can all go at the same time. Your big girls are so helpful - holding the baby and snapping pictures. Your menu sounds tasty and those burrito bowls would make the yummiest dinner. Thanks for the idea. Hope you get to head to the pool a lot this week!
