Menu Plan Monday!

Hi!!! Happy Monday!! 

We got back from our vacation yesterday, late in the afternoon!  We had SO much fun!!
I am going to do a little recap of our vacation later this week- but I thought I would share a few pictures today too :) It rained a couple of days...but mostly the weather was great!  We were pretty much at the beach every day :)  
We all still have sand stuck in our hair to prove it! HA!
Soo...now it is back to reality!! As we were driving home yesterday, I started thinking about our week and realized it was going to be quite a shock to jump right back into "real life" from being on vacation for 9 days!  I decided to plan out our meals for the week and head to the grocery store as soon as we got home- even though that sounded like the least fun thing ever after driving for 10 hours!  BUT- I knew if I got my fridge and pantry stocked and meals planned out- I would feel a lot better about tackling everything else that needs to get done this week! 

Here's what's on the menu at our house this week!

Monday: baked toquitos and fruit salad

Tuesday: build your own grilled chicken salads

Wednesday: grilled chicken fajita lettuce wraps

Thursday: pasta and turkey meatballs + steamed broccoli

Friday: pizza night

Saturday: meatball subs + salad

Sunday: grilled chicken sandwiches, green beans and mac'n'cheese

For tonight's dinner, I am going to brown some lean ground turkey and season it with "Mexican" spices.  Then I am going to take soft, flour tortillas, fill them with some meat and a generous amount of shredded cheddar cheese.  Then I am going to lay them, rolled up, on a cookie sheet and bake them until the cheese is bubbly and the outside of the tortilla has crisped up!  Kind of an alternative version of the "toquito!"  I have never made these before- so I will let you know what my family thinks! :)

For Tuesday's dinner we will grill some chicken and make our own salads.  I am going to chop up some avocado, carrots, and cucumbers for our "toppings."  Fresh and easy!!

On Wednesday, I am going to use the leftover grilled chicken that we made for our salads and make chicken fajita lettuce wraps.  I just cut up a yellow and red pepper really thin and let them cook for about 10 minutes on medium heat.  Then I add the chicken, thinly sliced, and cook for another 5 minutes.  Instead of tortillas, we use big romaine lettuce leaves!  My husband likes to add shredded cheese and sour cream on top of his wraps! :)

Thursday night, I am going to pull out a pasta dish I have in the freezer and make some meatballs to go with it.  I use lean ground turkey to make my meatballs- and sometimes follow a recipe and sometimes I don't! :)  If I am in the mood to follow a recipe, this is one I really like!!

Friday night is PIZZA NIGHT!  I love having a night of the week where I know I don't have to cook! :)  I usually make homemade pizza, but this week I thought I would take a little help and get a large take'n'bake pizza from the refrigerated section at Aldi.  They are fresh, not frozen- so if I buy mine in advance- I put it in the freezer until I am ready to cook it.  It is delicious, my kids think its "really yummy" and is only 4.99!! Yay for an easy dinner night! :)

For Saturday's dinner, I am going to take the leftover meatballs from Thursday's dinner and make meatball subs with them!  I haven't made these in awhile and I know my husband will be very happy to be having them- they are one of his favorite meals! :)  

Sunday's dinner is going to be casual.  I am pretty sure we will be going to the pool after church and I will want something easy to make once we get home.  We are going to grill some chicken, melt some muenster cheese on top and put it on a whole wheat bun for a super yummy chicken sandwich!  I will steam some green beans and make some mac'n'cheese (our favorite is the organic kind from Aldi!) and dinner will be served!

So that's the plan for the week!  Now if only the house could organize itself and the bags would magically get unpacked....I would be good to go! HA!

Hope you have the best day and I am SO happy to be back to my little, tiny corner of the internet! It was WONDERFUL to unplug for 9 days- but I did miss sharing here on the blog! Thankful for some time away and happy to be back into good ol' regular life :)

    1. Hi Johannah!! It is great to be back! We actually got to see 3 rainbows during the time we were at the beach!! We didn't like the rain- but getting to see the rainbows was a great consolation!
