Easiest Apple Crisp Ever!

Hi!! How was your weekend??  Did it feel like fall where you live?  On Saturday, here in Indianapolis, it was only in the mid-50's in the morning!! 
The cool air definitely made it feel like summer was over!   

In honor of cooler, fall temperatures- I wanted to share with you one of our favorite desserts I make in the colder weather months.
Chances are you already make something like this- but I thought I would show my method for making an apple crisp!

So- this "recipe," (if you can call it that) will serve 2-4 people depending on how big you cut the pieces of apple crisp.  When I make it for my husband and I, we each get a generous sized portion and there is one serving left over.

You will need:
(1) pie crust- I use pre-made pie crust and my favorite is from Aldi!
(3) Apples- I used Gala this time- but our favorite kind to use in apple pie/crips is Granny Smith
1/4 stick of butter
cinnamon
sugar
First- I cover my baking sheet in foil, then spray the foil with cooking spray.  
Then, I lay down my pie crust.
Next, I peel and slice my apples and add (approx.) 1/4-1/3 cup sugar and 1 - 1 1/2 tsp cinnamon to the apples.  The measurements are approximate, because it totally depends on how sweet or how much cinnamon you like! I usually start with 1/4 cup sugar and 1 tsp cinnamon, then I will taste an apple slice to see if I need to add more.  I don't think you can go wrong with adding a little more sugar...just makes it that much more delicious :)
After the apples have been tossed in the cinnamon/sugar mixture, I pile them up on one half of the pie crust. 
Then, it is time for the butter!  I just cut little pieces and place them all over the apple slices. I shove some butter under the apples, a couple pieces go at the very bottom....basically- you want the butter placed all over, so it will melt with the cinnamon/sugar apples evenly.  You can put as much or as little butter as you like!
After the butter is on the apples, I take the side of the pie crust the apples are not on and fold it over!  This is where you have to let go of perfection, if you are one of those people (ahem- totally talking about myself), and be ok with the pie crust not looking like blue ribbon potential at the state fair- HA!  If your crust tears a little bit- it is ok! You need to cut some slits a the top anyway!  As best as you can- this will depend on how many apple slices you have piled under the crust- pinch the crust together so the it is closed.  It ends up looking very rustic, if you will, but I am telling you- it is going to taste YUM!
The final touch I put on the crisp, before putting in the oven, is I lightly spray a small amount of cooking spray on top of the crust and then sprinkle some cinnamon/sugar on top.  It is just a little added extra- totally not necessary...but highly recommended :)
Bake your apple crisp at 400 degrees for about 25-35 minutes.  Your baking time will depend on your oven and how soft you like your apples.  I think by the time it was all said and done, my apple crisp took about 35 minutes.  But, I am definitely checking it at 25 and 30 minutes to make sure the crust isn't getting too dark!

You can serve it hot out of the oven or let it cool for a little bit before serving it.
My husband likes a little whipped cream on the side of his...I just like my plain :)

It really is the perfect little dessert when you are craving apple pie, but don't want to go to the trouble of making a WHOLE pie.  I usually make this dessert for my husband and I, after dinner, while he is cleaning up and the kids are playing and it probably takes me 15 minutes, max, to put it together!

  2. Oh my! This looks amazing! When my hubby is home next week, I'll definitely make this for him =) We make an apple crisp that has oats, brown sugar, white sugar, butter & cinnamon in it.
