Pinspiration Wednesday!

It's the first Wednesday of the month- which means it's Pinspiration Wednesday!!
On the first Wednesday of every month this year, I am hosting a linkup party with my wonderful friends Leigh and Erica!! 
This month's "theme" is FAVORITE CROCKPOT RECIPES!
I am seriously so excited to see everyone's favorite crockpot recipes...I LOVE to have my dinners prepped ahead of time- especially with school starting up in just a few weeks! From the time we get home from school until dinner is SO crazy with homework, tired kiddos, packing lunches, etc. I always feel like superwoman when I get my dinner set up in the crockpot early in the morning and know I don't have to worry about it until right before it's time to eat! :) 
My husband and I are big fans of Mexican food- so I had to pin these 
 crockpot chicken fajitas! So easy, super yummy and VERY healthy! My husband would love building his own fajitas with the chicken and peppers combo and I would put mine over cauliflower rice and shredded lettuce for more of a "Chipotle bowl." The possibilities are endless with this recipe!

I try to cook a nice dinner every Sunday...and I usually make a pork tenderloin or some kind of chicken dish.
 This Crockpot Brown Sugar Balsamic Glazed Pork Tenderloin looks absolutely delicious and would be so yummy paired alongside a steamed veggie with either some mashed potatoes or mac 'n' cheese! I have a feeling my kids would love this recipe because the pork tenderloin has a bit of sweetness to it from the brown sugar. The leftovers would be perfect over a salad or you could even make some quesadillas with it!!

This crockpot pork carnitas recipe looks DELICIOUS! Like I said, we LOVE our Mexican food and carnitas is a FAVORITE of my hubby. These pork carnitas could be put in tacos, quesadillas, a burrito bowl, on a salad...this is such a versatile recipe AND it makes A LOT. I definitely think I could get two meals out of this!! SCORE!

My husband would absolutely LOVE these Crockpot French Dip Sandwiches!
How perfect would this recipe be once football starts back up and you want to have an easy, yummy dinner ready for when the game comes on?? I also think if you are having a group of people over- these would be perfect to serve! 

And if you are feeling EXTRA motivated and want to be super prepared for your meals for the month- then you will love this post on how to prepare 10 healthy crockpot freezer meals in ONE HOUR!! I LOVE this idea!! Get all of the "bases" made for your meals and then all you have to do in the morning is decide what you want for dinner that night and dump that bag in the crockpot!! Amazing! I am definitely going to think about doing something like this!

I just HAD to include this because it made me laugh SO hard!! This is SO MY LIFE!!! HA!

    Have you tried the crock pot fajitas before?? I tried it once and I put the peppers and onions in that morning and I think I let them cook to long..they were mushy...We like ours more crunchy!! Let me know how yours turns out!!

    1. Yes! I just read your post and saw we had the same idea for those freezer meals!! Great minds think alike! I am wondering- if maybe you added the peppers just a couple hours before the meal was done-would they stay "crunchier?" I will let you know what I think once I make it myself!! :)

  2. I just filled our crockpot with tonight's dinner this AM. I love using it on days when I don't have a ton of extra time to spend prepping and preparing dinner.

  5. These all sound so good. One of my family favorites is a chicken ranch, just use several chicken breasts, 1 can cream of chicken soup, 1-2 cans chicken broth (depending on how much liquid you want)1 pack of dry ranch and 1 package of cream cheese. We like to serve with mashed potatoes or noodles because you will have a gravy with this.

  11. Every single recipe you mentioned sounded delicious!! I love a good crock pot meal :) I need to try some new recipes because crock pot meals make my life so much easier. And I just unpacked my crockpot so I'm prepared :) We've just hit the stage of refusing what we are having for dinner so your comic made me laugh and cry a little on the inside haha
