Thoughts for Thursday: Links that I am Loving!

Hi!! Happy Thursday!!

Sooo...I mentioned in my post yesterday that our house has been hit with the "back to school" sickies. Cora, Celine and James have all had a fever for the past couple of days.
Well the good news is: Cora's fever broke about mid-day and she has continued to be fever free!! The not so great news?? Charlotte came home from school and was burning up with a 102 degree fever yesterday!! So she won't be going to school today :(
This week has been a bust as far as going to school is concerned! HA!

With the kids being sick, I have been totally thrown off my routine...which makes me feel extra "all over the place." HA! Because of this...you get a REALLY random post today. Hooray!

Okay- so first- are you familiar with Jen Hatmaker? She is a Christian writer/speaker/blogger and while I have never had the pleasure of meeting her or hearing her speak- she seems absolutely amazing. My friend sent me a link to a blog post she wrote last August about getting her kids ready to go back to school and OMG. It is PERFECT!! You have to read it (if you already haven't)- you can find the article HERE!

I LOVE veggies and make it a point to have a serving of them at almost every meal. I also try to eat as little carbs as possible...not because they're bad for you- I just feel better when I am not eating a bunch of them :) Anyway- there is this whole "spiralizer" rage....where you make "noodles" out of veggies like zucchini, carrots, butternut squash, etc. Gina from the amazing blog, Skinny Taste, recently posted a recipe for a Broccoli Rabe and Sausage Parsnip Spiralized Pasta. UM. YUM. I want a spiralizer (this is the one I have my eye on)!!! I feel like it could be really life changing to make all sorts of veggie noodles...and SO fun too! Do you have one?? Do you love it?

Are you familiar with the blogger Jen Russum? I am not sure how I came across her blog, but I have been reading it for several years now. She is an EXCELLENT writer (she has her PhD in English and is a college professor + an amazing mom) and I just loved her latest blog post!! You can read it HERE!

I am totally okay with eating the same thing over and over again...and while I change it up for lunch and dinner, my morning meals look pretty much the same every day: smoothie with a scoop of protein powder + flax seed and for my "2nd breakfast" I have some scrambled eggs + egg whites with spinach (I eat about 6 mini meals/ day). Well- in an attempt to change it up a bit- I had Aaron pick me up some Kodiak Cake pancake mix (he got it our at our local super Target)- there are several different types of this pancake mix- I have the Kodiak Cakes Power Cakes Protein Packed Crunchy Peanut Pancake Mix (WHOA. That is a mouthful! HA!). I made some for the first time yesterday and they were SO good!! The reason I chose the crunchy peanut butter mix is because there is no milk in the dry mix. I was able to make my pancakes with almond milk and keep them dairy free. I used a 1/4 of pancake mix and 1/4 of almond milk and got two really good sized pancakes!! I smeared a little almond butter on top of them and YUM. It was a nice change from my egg scramble and only 4 smart points (if you are a Weight Watchers gal like me :)!  I know several other bloggers have mentioned they love the regular Power Cakes Pancake Mix- there is 14 grams of protein in one serving- which is SO great and makes for an awesome breakfast!!!

My cousin is getting married in a few weeks and I have been trying SO hard to find a dress to wear!! I just ordered 4 dresses from New York and Company- they were all SO pretty- but of course looked SO weird on me! I just ordered a couple maxi dresses from Walmart that were on clearance and I am hoping one of them might work. A maxi dress is a little more causal than I was wanting to wear...but I figured some statement jewelry and a pair of cute wedges maybe it will be ok. Nobody's going to be looking at the crazy lady with 5 kids anyway....unless one of them decides to meltdown during the wedding ceremony...which is a total possibility! HA!

Okay and to top this riveting post off- I have a confession to make: I had no idea what "fleek" and "bae" meant up until about a few days ago. I have seen all of these people in blog land and on instagram using these words...and really didn't not know what they meant.  I seriously had to google them!! HA!
Here's my opinion on this...you do you and use whatever words you like...but the use of proper grammar should not be DEAD!! :)

    I have not used a spirlizer. But I agree they could really be life changing.

    I knew "fleek" but googled BAE on Monday. Have a bestie with a teenager has really helped! hA.

  2. We have had the back to shook sickies too! My kindergartener has already missed a day of school. 😢 I have a spiralizer but don't use it as much as I should. But I'm coming off a three day detox diet so I will be using it more because I don't want to go back to bad habits! I also have Kodak mix and I LOVE it! I eat the same bfast most every day too- protein shake after working out, then eggs with spinach and other veggies (and some goat cheese when I'm not detoxing). Yum!

    I don't use bae, but I do use fleek. But I grew up in the 90s listening to a LOT of gangster rap (😱) so my speech is often not what it should be when I get mad or when I'm in adult company. 😬😬😬

  3. Oh gosh!! I hope everyone starts feeling better so soon in your home!!
    I have a spiralizer thingy and we do love it! It's nothing fancy, it's just a hand held one, but it works great. We did zoodls with turkey meat sauce a couple of weeks ago and it was delish.
    The Kodiak pancakes are so so good aren't they! I buy the ones that are in a little container and you just add a bit of water and then stick it in the microwave. That's what I bring with me to work in the mornings. Love them!!

    1. I am just now learning about the Kodiak cakes individual cups and packets… I definitely want to try them out! They seem like such an easy breakfast option!

  4. I love the meme at the end about proper grammar! Nothing irritates me like someone not using your and you're correctly. I even find mistakes in papers, magazines, etc. How in the world?!? I am also disproportionately irritated by the word bae. It just gets on my last nerve!!! 😂

  6. Sorry to hear that everyone is or has been sick at your house. Hope it passes quickly so that you are all healthy for the weekend. I've always wanted a zoodle maker. I love pasta and stir fry type dishes so I figured it would be good to find a carb substitute to make those meals a little healthier. I laughed at your joke about people not knowing how to properly use contractions. I taught third grade for almost 10 years and we worked so hard to master all those contractions. I feel so embarrassed for people when they use the wrong there, to or any other one. I feel like I go into teacher mode and want to send them my contraction poster with visuals to help them learn the right way. haha

  9. Ha, I am big on grammar too! There, their, they're seem like they're the most common offenders but I've also seen people put apostrophes places they don't need like hand's up and our's.
